It’s a simple skillet supper of cabbage, onions, bacon, and noodles... and yet, it hits like a comfort bomb every time. I don’t crisp the bacon (team soft and savory π♀️), and I toss in Italian seasoning with a little crushed red pepper because cozy can still bring the flavor. πΆ️
No rules, just comfort. Leftovers? Even better the next day.

Haluski – Cabbage, Bacon & Noodles

Ingredients
πΈ 6 slices thick-cut bacon, choppedπΈ 1 medium yellow onion, sliced
πΈ 1 small head green cabbage, chopped
πΈ 12 oz egg noodles (wide or medium)
πΈ 2–3 tbsp butter
πΈ Salt & pepper, to taste
πΈ Optional: garlic powder, paprika, Italian seasoning, crushed red pepper, fresh parsley for garnish
Instructions
1. Boil the Noodles: Bring a large pot of salted water to a boil. Cook the egg noodles according to package directions. Drain and set aside.2. Cook the Bacon: In a large skillet or Dutch oven, cook the chopped bacon over medium heat to your preferred doneness. Remove with a slotted spoon and set aside, leaving the bacon drippings in the pan.
3. SautΓ© the Onion & Cabbage: Add the sliced onion to the bacon drippings and cook until softened (about 5 minutes). Toss in the chopped cabbage and cook until tender and lightly browned, about 10–15 minutes, stirring occasionally. Add a bit of butter if the pan gets too dry.
4. Combine & Season: Add the cooked noodles and bacon to the skillet. Stir in butter to coat. Season generously with salt, pepper, and optional spices to taste. Warm through for 2–3 minutes.
5. Serve & Enjoy: Serve warm, topped with fresh parsley if desired. Cozy, humble, and full of flavor.
Kitchen Note
I don’t crisp the bacon — I cook it to my liking. I also love adding a sprinkle of Italian seasoning and a pinch of crushed red pepper for a little kick. This dish is super forgiving: swap in smoked sausage or toss in a splash of apple cider vinegar for a tangy twist!
